Midsummer is just around the corner!
At Gästis we serve a traditional midsummer buffet and many of us happily eat herring, new potatoes and strawberries for a large part of the summer. So delicious, simple and easy to prepare! Simply healthy, light food.
Adam, who is the restaurateur at Gästis, and our son, likes to come home to his childhood garden and pick elderflowers which are used in the restaurant; in drinks and for fresh summery desserts such as sorbets and parfaits. Yummy!
So before the summer, we take the opportunity to offer our head chef, Marcus Hesters, delicious summer juices:

Here's how to do it:
Boil the water and pour it over split rhubarb, neat bunches of elderflower and citric acid.
Let it steep for 48 hours, strain and boil for 5 min. Skim the juice. Add sugar & honey and stir until sugar and honey dissolve. Taste to make it just right for your taste.
