Last Friday, Gästis launched a brand new concept that is primarily aimed at guests interested in wine.
Naturally, the husband and I were very curious and decided to test it.
On a grey Friday evening we came into Gästis and were greeted by atmospheric French bistro music, a happy intimate feeling & Helena Thimansson – a knowledgeable and pleasant sommelier who mingled around the tables and talked about the wines, their origin and character in an unpretentious and pleasant way. And of course you could also ask questions about wine.
The chefs presented a new menu for the evening consisting of 7 appetizers and 2 desserts with prices for dishes incl. wine from SEK 150.
The husband tried fish soup with saffron and fennel and with it a white wine from Galicia Rias Baixas, Notas frutales 2018 La Trucha with 100% Albarino grapes.
I personally started with a creamy, delicious risotto with chèvre, fried onion and beetroot. To that, a lovely Sauvignon Blanc from the Loire valley Domaine Bellevue 2018, AOC Torraine. Helena told me that the acid-rich cheese together with the beets meets the acid in the wine so that it creates a wonderful harmony in the mouth & it really felt. When you taste the dish separately and the wine separately, it is experienced completely differently.
As the number two course, we both chose Ox Fillet with a sinfully good foie gras cream, red wine cloud & pickled Brussels sprouts. With this dish we were served a lovely wine from Rinaldi in Piedmont, 2016 Panta Rei, Monferato Rosso made from 50% Cabernet Sauvignon & 50% Barbera. It really added flavor!
